As Easy As It Gets

Pros:  Hardback Spiral design makes it easy to stay open.

Cons:  None

The Bottom Line:  With the help of this cookbook, a healthy nutritious meal is just minuets away

My mother loves Cookbooks and has such a large collection that it was no surprised when she asked for the Betty Crocker's Bisquick Cookbook for Christmas this year. It consists of 289 pages, including 7 chapters which are divided like this:
Chapter 1/ Best-Ever Breakfast
Chapter 2/ Savory Snacks and Breads
Chapter 3/ Family-Pleasing Dinners
Chapter 4/ Impossibly Easy Pies
Chapter 5/ Delicious Desserts
Chapter 6/ Favorites Made Lighter
Chapter 7/ In the Kitchen with Kids

At the back of the book is a Metric Conversion Guide, helpful nutrition and cooking information and index. The beginning of the book gives a brief history of Bisquick and some Bisquick tips such as; What's the best way to measure Bisquick? What's the best way to store Bisquick? Is Bisquik affected by humidity? And, Can I substitute Reduced Fat Bisquick for Original Bisquick in my recipes?

Each recipe includes the ingredients, directions to mix and bake as well as info on its' nutritional value such as how many calories, fat, cholesterol, sodium, carbohydrate, protein, and vitamins values. It also includes Diet Exchanges. Underneath that is usually one of Betty's Tips concerning that particular recipe. The opposite page has a colored picture of the dish.

The Cookbook is in a hard spiral binding which makes it very easy to turn pages and stay on the page where you open it to.

I had to special order the book from Walden Books as they seem to be selling out of it just as quickly as they get them in. The price I paid was $21.95 plus tax. I wish that it would have came in a box so it would be easier to wrap for Christmas, but in any event, I know that my Mom will like this Cookbook. I've certainly enjoyed reading the recipes and I imagine that after she opens it, I'll put in my list for copies of many of the included recipes :)


As promised, here is one of the recipes from the Cookbook.


I found this recipe in the new Betty Crocker's Bisquick Cookbook. I took the liberty to substitute different ingredients. In following their steps, I found that one extra step was needed. The last time to stir gently as the veggies all had floated to the top, thus making the egg in the bottom. The veggies were substituted for 1 pound of sausage in the original recipe. This dish can be eaten most anytime of the day and smells delicious!



Do-Ahead Veggie Bake

1 Cup of biscuit mix
2 Cups of shredded cheese
2 Cups of milk
6 eggs slightly beaten
1 small can of mushrooms
1 Cup of chopped spinach
1 Cup of onion/ peppers
1 tsp salt
black pepper to taste


Grease 2-quart casserole. Mix eggs till slightly beaten. Add biscuit mix, milk, salt, and pepper. Fold in spinach, mushrooms, and onion. Pour into casserole dish. Using a fork add most of the cheese, leaving a small amount out to add to the top. Refrigerate at least 4 hours but no longer than 24 hours.

When ready to bake preheat oven to 350*. Run a fork thru the dish slightly to mix again, then add the remaining cheese to the top. Bake uncovered about 1 hour or until knife inserted in center comes out clean.
